Vinification is pretty similar to those wines that Jonathan Maltus makes in France. After running through two sets of sorting tables – firstly by bunch and then, after the destemmer, grape by grape, followed by a long cold soak before fermentation occurs. The wines undergo malolactic fermentation in new French oak, and are aged in the same oak for up to two years
Maturation in new French oak barrels for 2 years
Deep ruby red with purple hues
Good floral lift to the aromas of bitter cherry, redcurrant, liquorice and chocolate. Also some menthol and minty nuances emerging
A lovely spine to the flavours appearing in the bouquet. The suave finish features flowers, plenty of tannic kick and a note of chocolate
Excellent accompaniment with pasta with red meaty sauces, red meat, stews and aged cheeses
