Terroir
Sandy-silt soils, of medium consistency with an alkaline reaction due to the presence of limestone
Grapes
Syrah 100%
Vinification
Grapes are harvested in September. Fermentation takes place small steel and cement tanks at 26ºC with 4 daily pump-overs followed by maceration for 6 to 8 days and malolactic fermentation carried out.
Aging
Maturation for a few months in French oak barrels then transferred to bottle and aged for 3 months
Colour:
Bright ruby red with purple hues
Bouquet:
Pronounced oak, morello cherry and leather aromas.
Taste:
Well concentrated and structured. Peppery with intense strawberry flavours and a long lasting aftertaste
Food pairing:
Excellent accompaniment with pasta having rich meat sauces, red meats, wild boar and mature, aged cheeses
Alcohol: 14% Vol.
Serving Temperature:
18 °C.
Aging Potential:
5 – 7 years
