Grapes
Syrah 50%, Grenache noir 25%, Carignan 25%
Vinification
Handpicked into crates. The grapes are passed through sorting tables, destemmed, then sorted again berry by berry for optimal quality. Carignan and Syrah grapes are vinified in carbonic maceration separately whilst the Grenache grapes are vinified in the traditional way. A cold maceration is then carried out before the start of fermentation as well as a final hot maceration to perfect the extraction of polyphenols. Malolactic fermentation takes place in vats
Aging
6 months in new one-wine barrels, after which the wine is blended

Deep red.
Bouquet:
Intense nose of black fruits and sweet spices
Taste:
A bold wine with well balanced tannins and acidity. The mid-palate reveals complex notes of black fruit, vanilla and earthy notes. The character of the clay-shale terroir comes through in a subtle, harmonious finish.
Food pairing:
Ideal with red meats, meat based pasta dishes and medium aged cheeses.
Alcohol: 14.5% Vol.
