Vinification
Vinification is pretty similar to those wines that Jonathan Maltus makes in France. After running through two sets of sorting tables – firstly by bunch and then, after the de-stemmer, grape by grape, followed by a long cold soak before fermentation occurs. The wines undergo malolactic fermentation in new French oak, and are aged in the same oak for up to two years

Taste:
Upon tasting you can detect a cool climate influence in the acidity, especially the tannins which are firm. Since the wine contains Merlot and Cabernet Franc it is remarkably ripe in blackberries, cherries and currants. It shows lots of elegance and complexity
Food pairing:
Excellent accompaniment with pasta with red meaty sauces, red meat, stews and aged cheeses
