Vinification 

Before harvesting grapes are tasted to find their aromatic peak then destemmed during the night which allow to have whole grapes in vatting.  Cold pre-fermentation maceration at 6/8 °C for 5 to 6 days after which temperatures are raised to start alcoholic fermentation in thermoregulated vats and obtain the natural yeasts. During this period regular punching and pumping over is carried out and malolactic fermentation is carried out in the vats.

Aging

50% of the volume is aged in vats to keep the fruit and 50% volume is matured for 6 months in 1 / 2 year old barrels to obtain complexity and roundness

Brilliant cherry red

Bouquet:

Fine and elegant nose where aromas of sour cherries and blackcurrants dominate.

Taste:

A dry, medium bodied wine which is well balanced in regards to  tannins and acidity.   A well rounded mouthful with a long and persistent finish

Food pairing:

Grilled red meat, veal, game, stews and medium aged cheeses.

Alcohol:  12.5% Vol.
