Vinification 

Manual harvesting, destemmed and crushed, 12 hours pre-maceration fermentation at 34ºC to increase enzyme function; pre-selected yeast; alcoholic fermentation at controlled temperatures (22-24ºC); light pumping over.

Aging

In stainless steel vats until bottling

Full bodied and very aromatic with notes of blueberries and blackberries

Taste:

Full-bodied and concentrated but very fresh with ripe and round tannins. Extreme flavours of blueberries and blackberries. Very long lingering finish.

Food Pairing

Pairs well with game, roast meats and mild soft cheese.
