Vinification
Manual harvesting, Destemmed and crushed, 12 hours pre-maceration fermentation at 34C to increase enzyme function; pre-selected yeast; alcoholic fermentation at controlled temperatures (22-24C); light remontage.
Aging
New and Old French barriques for 12 months and 10 months in bottle.

A bursting bouquet of ripe red fruit, blackberries, leather and spice.
Taste:
Structured and concentrated with layered tannins, good acidity and a long persistent finish of dark forest fruit
