Terroire

A mix of schist, slate and chalky soils

Grapes
Grenache – Syrah (percentages depending on vintage)

Vinification 

Handpicked in crates at optimal ripeness. Part of the Grenaches grapes are vinified using carbonic maceration (whole bunch fermentation). The Syrahs are vinified according to traditional methods (stemmed grapes…) with regular rack and return and pumping over. Malolactic fermentation in vats.

Aging

Each variety is aged separately in French new oak barrels for 12 months and is regularly racked  before blending

Red cherry

Bouquet:

Concentrated nose of red fruits, fresh figs, herbs and black pepper.   Smoky with evident notes of liquorice

Taste:

A bold, dry red wine with medium acidity and soft tannins. Good structure and well rounded wine with hints of plum and forest fruit.

Food pairing:

Grilled and roast red meats, game, stews and medium aged cheeses.

Alcohol:  13.5% Vol.

Serving Temperature:

18 °C.

Aging Potential:

5 -7 years
