Vinification
Harvesting from the 15th to the end of September after which the rapes are dried on special racks called ‘graticci’ until mid December. Vinification is processed in steel tanks after which the grape juice is transferred to barrels.
Aging
In new barrels for 24 months and a further minimum of 12months in the bottle
Colour:
Intense ruby red with violet shadings, nearly opaque with traces of garnet
Bouquet:
Complex, expansive and persistent with sweet fruits, notes of blackberry, black cherry and a subtle nuttiness. Sweet spices lead to a mineral finish
Taste:
Smooth, sweet, voluptuous body, persistent and velvety. The tannins are thick and sweet, the acidity is well balanced, cutting the density and heaviness, whilst giving structure. Long finish, persistently fruity with notes of underbrush, forest fruit, complex and intense spices
Food pairing:
This is a “meditation wine”, therefore it is perfect with dry pastries, cream or jam tarts, almond biscotti or chocolate. Also pairs well with aged cheeses, both spicy and herbal
Alcohol: 14% Vol.
Serving Temperature: 18 °C – 19 °C
Aging Potential: Can be drunk young but the wine keeps developing for 10 – 15 years
