Terroir
Sandy and silty with white limestone
Grapes
Corvina and Corvinone 70% – Rondinella 20% – Croatina e Oseleta 10%.
Vinification
Grapes are harvested by hand and collected in crates, followed by a soft pneumatic press. Alcoholic fermentation at controlled temperatures with selected organic yeasts that are used for the Amarone grapes followed by a secondary fermatation of the young Valpolicella in October on Amarone pomace. Natural malolactic fermentation in 500 L barrels with batonnage once a month for 1 year until October following the harvest. Natural cold stabilization of the wine for 10 days at -2 °C.
Aging
12 months in 500L french oak barrels of which 30% will be new and 70% with secondary passage

Bouquet:
Evident notes of ripe red fruit, cherries, chocolate and tobacco.
Taste:
Well balanced, slightly structured with vibrant cherry and bright raspberry flavours. Well defined tannins with hints of chocolate finishing off with a plummy, blackberry aftertaste.
Food pairing:
First courses with meat based sauces. All kinds of red meats, roasted or stewed and medium aged cheeses
Alcohol: 14% Vol.
Serving Temperature:
14 °C – 16 °C.
Aging Potential:
10 years.
