What to expect

Evident notes of ripe red fruit, cherries, chocolate and tobacco.  Well balanced, slightly structured with vibrant cherry and bright raspberry flavours.  Well defined tannins with hints of chocolate finishing off with a plummy, blackberry aftertaste.

Production Area
Comune di Mezzane – Località Monti Garbi (Verona).

Terroir
Sandy and silty with white limestone

Grapes
Corvina and Corvinone 70% – Rondinella 20% – Croatina e Oseleta 10%.

Vinification
Grapes are harvested by hand and collected in crates,  followed by a soft pneumatic press.  Alcoholic fermentation  at controlled temperatures with selected organic yeasts that are used for the Amarone grapes followed by a secondary fermatation of the young Valpolicella in October on Amarone pomace.  Natural malolactic fermentation in 500 L barrels with batonnage once a month for 1 year until October following the harvest. Natural cold stabilization of the wine for 10 days at -2 °C.

Aging
12 months in 500L french oak barrels of which 30% will be new and 70% with secondary passage

First courses with meat based sauces.  All kinds of red meats, roasted or stewed and medium aged cheeses

Alcohol: 14% Vol.

Serving Temperature:

14 °C – 16 °C.

Aging Potential:

10 years.
