Vinification
Hand picked, followed by soft pressing and transferred to steel vats for fermentation, the wine is then transferred to barrels and stored over the winter on their lees, which imparts a subtle yeastiness and, occasionally, a slight spritz.
Aging
Wine is aged in the barrel with the yeast retained, rather than being clarified before aging. Aging on the lees increases the complexity and creaminess of the wine

On the nose citrus fruit, green apple, pear and minerality.
Taste:
Zesty and fresh, with well pronounced acidity. Flavours of pear, lemon and ripe green apples finishing off with a long, persistent aftertaste

Hors d’Oevures, pasta dishes, white meat, poultry and soft cheeses
Alcohol: 12% Vol.
