Vinification
The grapes are hand picked at the best moment for the production of the spumante base wine. After a brief criomaceration of the grapes and a soft pressing as well, the fermentation begins
at a controlled temperature in stainless steel tanks. Upon completion of the first fermentation, the base wine is prepared for a second fermentation in a sealed stainless steel tank (Charmat Method). The production cycle is never less than 90 days so as to allow, at the end of the second
fermentation, an adequate stay on the yeasts in order to characterise the sparkling wine.
Aging
Aging in stainless steel tanks at a controlled temperature on the lees.
Colour:
Bright straw yellow with silver hues with a delicate perlage.
Bouquet:
Intense and elegant nuances of white fruit and citron along with subtle fragrances of floral hints and acacia blossoms
Taste:
Savory, fresh and persistant to the mouth with intense flavours of white flowers, delicate hints of pear and apple, lively citrus sensations pleasantly contrasted by the smoothness and delicate perlage.
Food pairing:
Recommended with all kinds of starters or as an aperitif
Alcohol: 12% Vol.
