Vinification:
Hulling of the bunches followed by cold maceration and natural draining. Non malolactic fermentation at controlled temperatures of 12 to 13 °C in stainless steel tanks. Batonnage once a week until bottling.
Aging:
In stainless steel tanks at cold temperatures.
Colour:
Pale blush pink
Bouquet:
Floral particularly that of roses and raspberries
Taste:
Fresh and long lasting, well balanced flavours of strawberries and raspberries
Food Pairing:
Appetizers and cold dishes. Ideal with rice dishes, poultry and game in general, fish and cheeses
Alcohol:
12.5% Vol.
Serving Temperature:
10 °C – 12 °C.
Aging Potential:
3-4 years
