Vinification
Generally hand picked mid-October, put in small cases and subsequently placed in temperature controlled storage. In small stainless steel fermenting tanks. The maceration on skins lasts for over 4 weeks so as to obtain the best result of the final product.
Aging
Aging takes place in new barriques where it ages for 12-16 months.
