Vinification
Grapes are harvested during third week of October running into early November, after which they are crushed and fermented for a period of about 20 days in steel tanks in contact with the skin. Fermentation occurs with selected yeasts at a controlled temperature and malolactic fermentation is spontaneous.
Aging
18 months in steel tanks, then 18/22 months in barrel and 6 months in the bottle.

Deep ruby red wine
Bouquet:
Ripe red fruits, blackberries, blueberries, plums, cherries and violet mixed up with tertiary aromas of cocoa, licorice, tobacco, cloves, black pepper and leather.
Taste:
Great structure and boldness backed up by ripe red fruit and raspberry flavours with a backbone of tobacco and vanilla. Layered tannins and well balanced acidity gives this wine a great harmonious finish
Food pairing:
Recommended with lasagna, first courses with tomato sauce, “arrosticini” (typical sheep meat from Abruzzo), braised meats, wild game, herbal and seasoned cheeses.
Alcohol: 14.5% Vol.
Serving Temperature:
18 °C. It would be ideal to open bottle about 3 hours before consumption
Aging Potential:
up to 10 years.
