Corvina e Corvinone 70% – Rondinella 20% – Croatina 5% – Oseleta 5%
Vinification
Grapes are harvested by hand, including double sorting and collected in trays, they are left to wither for 3 months followed by soft air pressing in December following the harvest. Fermentation takes place at controlled temperatures with selected yeasts for 25 days in steel tanks. Natural malolactic fermentation in 500 L barrels with batonnage once a week for the first year.

24 months in 500L French oak barrels

Ripe red fruits with spicy aromas of liquorish, black pepper and notes of chocolate
Taste:
Concentrated and tight yet well balanced with soft tannins, great depth and a long lingering aftertaste

Savoury first course dishes with meat based sauces and truffles. All kinds of red meats, roasted or stewed and aged cheeses
Alcohol: 15% Vol.
Serving Temperature:
16 °C – 17 °C.
