Vinification
Grapes are harvested during first 10 days of November, after which they are crushed and soaked for a period
of about 25/30 days in steel tanks where red vinification with a skin contact for at least 25 days. Fermentation occurs with selected yeasts and malolactic fermentation is spontaneous.
Aging
12 months in steel tanks, 24/36 months in new barrels and then 18 months in the bottle.

Intense dark ruby colour
Bouquet:
Overwhelming bouquet of delicious black cherries, spices, tobacco, smoke, caramel and liquorice.
Taste:
Impressive and powerful with concentrated dark fruit, chocolate, caramel and tobacco flavours. Fine integrated tannins with a beautiful plummy and jammy finish
Food pairing:
Recommended with rich and complex dishes that are slow cooked (red meat, game, seasoned cheeses) or with chocolate
Alcohol: 15.6% Vol.
Serving Temperature:
18 °C. It would be ideal to open bottle about 4 hours before consumption
Aging Potential:
15 – 20 years.
