Vinification
Manual harvesting in crates followed by sorting on conveyor belts before and after stemming. Cold maceration at 6ºC, for 4 to 5 days in vats, followed by traditional alcoholic fermentation with regular cap plunging, racking and pumping over. Once fermentation is complete the wine is left to macerate for around one week, in order to extract tannins and obtain a fine structure. Complete malolactic fermentation in French oak barrels.
