Vinification
Grapes are picked and de-stemmed followed by a soft pressing. Maceration for 12-15 days at 28°C. Fermentation in stainless steel tanks at a controlled temperature.
Aging
Maturation in French barriques and in 30 hl. oak barrels. Refined in bottle.

Bouquet:
Persistent bouquet of red fruit, leather, earth and plums, with hints of vanilla and tobacco.
Taste:
Bold, structured and plummy with an earthy character, lively tannins, deep, dark fruit and rustic finish
Food pairing:
Pasta with particularly rich sauces, red meat, game and mature cheeses
Alcohol: 14.5% Vol.
Serving Temperature:
18 °C.

up to 12 years
