Vinification
Grapes are harvested during third week of September, after precushing and soft pressing of the grape, Cryomaceration at 6 °C for 36 hours occurs. The must is then fermented with selected yeasts in steel tanks at a low temperature (13 – 14 °C).
Aging
6 months on its fine lees in steel tanks, then 10 months in the bottle

Bouquet:
Pineapple, melon, exotic and tropical fruits, dried yellow flowers and apples. The wine’s aromatic complexity is accentuated by a marked minerality.
Taste:
Structured with dried fruit and tropical fruit flavours together with ripe apples, almonds and a buttery finish on the palate
Food pairing:
It is recommended with fish dishes, cold cuts, white lasagna, risotto, courtyard animals, seasoned cheeses, white meat ragù (Italian sauce).
Alcohol: 13.5% Vol.
Serving Temperature:
8 – 10 °C.
Aging Potential:
up to 7 years.
