Vinification
Grapes are picked by hand at the end of August followed by maceration of crushed grapes at a temperature of 8% for 18 hours followed by soft pressing. Fermentation in stainless steel tanks at a controlled temperature of 16°C, followed by racking and an evolution period on the lees until bottling.

Bouquet:
Characteristic bouquet for sauvignon with a wealth of aromas of citrus, lime and grapefruit.
Taste:
Dry palate with medium body, fresh acidity. Good balance with moderate flavours of lemon and citrus fruit
Food pairing:
Light appetizers, fish, canapes, cured ham and white meats
Alcohol: 13% Vol.
Serving Temperature:
10 °C.
